Beans are extremely versatile. On the Beans 101 demo we go all out in looking at just how many things you can whip up with the humble bean – from dressings to desserts. Here, chickpeas are transformed into moreish high-protein snack with a bite of warming spice. Ensure the chickpeas are properly roasted before removing from the oven. The secret is to keep shaking up the roasting pan for even crisping, then take out just a few to test if they are crisp once cooled. Keep shaking the pan every few minutes until they are perfect. The ‘Goldilocks Principle’ definitely applies to these, so play around with the seasoning until they are just right for you. Make larger batches and store in an airtight container for a convenient nibble on the go.
2 cups cooked chickpeas
2 tsp olive oil
2 cloves of garlic, mashed
½ tsp each: paprika, garam masala, cayenne pepper
Salt and pepper to taste
Chopped coriander leaves/ Flake salt to serve (optional)
1. Preheat oven to 200º C. Combine well-drained chickpeas with seasoning. Spread on a baking sheet and bake for 35 to 40 minutes until lightly browned and crispy, shaking every 5 minutes to ensure even browning.
2. Sprinkle with additional salt and garnish with chopped coriander to serve.
